Straightforward Pumpkin Soup Recipe – Oxygen Journal

Simple pumpkin soup

Power: 4 servings


  • 2 yellow onions, chopped
  • 3 chopped garlic cloves
  • 1 tbsp avocado oil
  • 2 cups of chicken broth (or vegetable broth)
  • 2¼ cups of pumpkin puree
  • ½ cup coconut milk
  • 1 teaspoon salt
  • ¼ teaspoon pumpkin pie spice
  • black pepper to taste


Add the onions, oil and garlic to the saucepan and cook until translucent over medium heat. Add the remaining ingredients and bring to a boil, then reduce the heat to low and simmer for 15 to 20 minutes. Remove from heat and stir until smooth with a hand blender. Serve immediately.
